EGUSI SOUP MADE EASY

Egusi soup is my favourite soup yes… My number one soup … It’s said that anyway you start cooking egusi soup, you can never go wrong yes, but this recipe is one of a kind ..easy and simple to follow…

INGREDIENTS

  1. Egusi(Melon) ……………..  2cups
  2. Red oil(palm oil) ………..   3 cooking spoons
  3. Beef  …………………………  400g
  4. Dry fish(optional)…………  4pcs
  5. Cow skin (optional) …….    200g
  6. Periwinkle(optional)  ……   150g
  7. Seasoning  …………………. To taste
  8. Salt  …………………………… To taste
  9. Pepper    …………………….. To taste
  10. Crayfish  ……………………… 150g
  11. Onion  ………………………… 2 pcs
  12. Stock fish  ……………………   200g
  13. Bitter leaf  ……………………   1 handful

STEPS

  1. Make stock from the beef,cow skin and stock fish,adding crayfish,pepper,onion,and seasonings
  2. Add salt (stir properly)
  3. Let the stock boil for at least 3mins,so that the beef and cow skin will be well cooked..
  4. Set another pot on the fire
  5. Add red oil(palm oil),little onion,and little seasonings (stir properly)
  6. Add the grounded Melon(egusi) to the red oil and fry properly.
  7. Pour in the beef stock and stir properly
  8. Add the dry fish and periwinkle
  9. Allow to cook for about 2mins … Add water if its thick
  10. Add vegetable (bitter leaf preferable)

EASY WAY TO MAKE VEGETABLE SOUP WITH ACHI (UGU LEAF)

Vegetable soup is very healthy,in fact it’s my favorite soup,as the name implies it contains more of vegetable, just go with this simple recipe of mine…

INGREDIENTS

  1. Vegetables  ———————–   400g
  2. Water leaf   ———————–   300g
  3. Stock fish  ————————-  200g
  4. Smoked fish  ———————  1 medium size
  5. Cow skin (diced) —————   (optional)
  6. Beef  ——————————   500g
  7. Onion ——————————  1 ball
  8. Periwinkle  ————————  2 cups
  9. Chili pepper ———————-  (to taste)
  10. Salt   ——————————-  (to taste)
  11. Cray fish  ————————   1 cup
  12. Ginger  —————————-   40g
  13. Palm oil  ————————-    2 cookin spoons  
  14. Maggi —————————     (to taste)
  15. Fresh pepper —————–     50g
  16. Achi  —————————–  100g  

STEPS 

  1. Add water in a clean pot and set to boil
  2. Add stock fish,Cow skin,periwinkle, and onion
  3. Add salt, chili pepper, beef (allow to boil)
  4. Add smoked fish,maggi,cray fish,and ginger paste, then stir very well
  5. Add water leaf, red oil, then stir (allow to cook for at least 5 mins)
  6. Add fresh pepper and achi, then mix very well (allow to cook for 5 mins)
  7. Add vegetable leaf(ugu) mix very well and ready to serve

2. Dried fish ————————–     4 medium size
3. Beef ——————————        1kg(optional)
4. Shrimps ————————–       2 cups (optional)
5. Isam(periwinkle) —————–     3 cups
6. Cow head(optional) —————  1kg(optional)
7. Salt ————————————  To taste
8. Maggi ——————————–   To taste
9. Pepper ——————————-   To taste
0. Crayfish (grounded) —————- 1/2 cup
11. Palm oil ——————————  1 cooking spoon
12. Chicken (optional) —————-  1kg(optional)
13. Achi ———————————    150g
14. Uziza leaf —————————- 1 cup
15. onions ——————————-   1 ball
16. Ngolo(optional) ——————–  1 cup

STEPS
1. Make a stock from your Beef,Chicken,Cow head, Stock fish.
2. With a clean pot add water and the stock you made from you beef ,chicken,cowhead or stock fish
3. Add periwinkle,smoked fish, and cowskin
4. Add salt, maggi, pepper,onion,and crayfish(allow to boil)
5. Add palm oil then stir, add your beef, chicken,cow head, stock fish (all can go)
6. Add Achi and stir very well
7. Allow to cook for attest 10min( add extra water if it’s too thick)
8. Add uziza leaf, taste and correct seasoning. bring it down.
