NIGERIAN JOLLOF RICE

If you go to any party,event or occasion in Nigeria and you did not see jollof rice my dear have it in mind,that event isnt complete at all, its culture that jollof rice must be served, well here is a simple recipe of Nigerian jollof rice try it and give me feed backs…

INGREDIENTS

  1. Rice  …………….               1 kg
  2. Tin tomatoes  ..                1 tin
  3. Chicken  ………                 1 kg
  4. Onion …………..                 3 balls
  5. Dry pepper …….                to taste
  6. seasoning cubes  ……….     to taste
  7. Ginger   ………………………   to taste
  8. Garlic  ………………………..    to taste
  9. Thyme  ……………………….    to taste
  10. Curry  …………………………    to taste
  11. Salt  …………………………..    to taste
  12. Fresh pepper  ……………..   to taste
  13. Vegetable oil ………………. 2 cooking spoon

STEPS

  1. Parboil the rice and keep aside

MAKE CHICKEN STOCK

  1. Put the chicken in a clean pot
  2. Add onion,dry pepper,seasonings,ginger and garlic
  3. Add curry,thyme and salt(add other good spices if you any)
  4. mix properly then add water(allow to cook)

SET THE CHICKEN STOCK ASIDE AND PREPARE THE  GRAVEY

  1. Add veg.oil
  2. Add fresh pepper and onion (stir properly)
  3. Add the tomato paste and allow to  fry very well (then set aside)

NOW MAKE THE JOLLOF RICE

  1. Add the chicken stock in a pot
  2. Add the gravey and then set to boil(add water if needed)
  3. Add little pepper,seasonings and salt (if needed) allow to boil
  4. Add the parboiled rice and allow to cook

EASY SPAGHETTI JOLLOF WITH CABBAGE

This is a very simple way of making spaghetti jollof,my friends always want me to prepare this meal…if i don’t, who will lol

INGREDIENTS

  1. Spaghetti  ———- ——————-   500g
  2. Cabbage   ——————————  150g
  3. Fresh tomatoes  ———————   150g
  4. Tomatoes paste ———————    200g
  5. Fresh pepper  ————————   30g
  6. Maggi    ——————————–   2 cubes
  7. Salt    ———————————–   20g
  8. Chili pepper ————————–    50g
  9. Crayfish  ——————————   100g
  10. Ginger   ——————————-   20g
  11. Garlic  ———————————   20g
    vegetable oil for frying

STEPS

  1. Boil your spaghetti (till cooked)
    2. Chop finely your onions, fresh pepper,fresh tomatoes, and cabbage
    3. pour your vegetable oil into a pot
    4. Add ginger,garlic,and onions and stir
    5. Add your fresh pepper, fresh tomatoes, and tomatoes paste stir properly(add little water if thick)
    6. Add maggi,salt, chili pepper, and crayfish stir very well(add little water if thick)
    7. Add your cabbage and allow to cook
    8. Then pour in your boiled spaghetti and mix very well, on a low heat allow for 3 mins (ready to serve)
