NIGERIAN JOLLOF RICE

If you go to any party,event or occasion in Nigeria and you did not see jollof rice my dear have it in mind,that event isnt complete at all, its culture that jollof rice must be served, well here is a simple recipe of Nigerian jollof rice try it and give me feed backs…

INGREDIENTS

  1. Rice  …………….               1 kg
  2. Tin tomatoes  ..                1 tin
  3. Chicken  ………                 1 kg
  4. Onion …………..                 3 balls
  5. Dry pepper …….                to taste
  6. seasoning cubes  ……….     to taste
  7. Ginger   ………………………   to taste
  8. Garlic  ………………………..    to taste
  9. Thyme  ……………………….    to taste
  10. Curry  …………………………    to taste
  11. Salt  …………………………..    to taste
  12. Fresh pepper  ……………..   to taste
  13. Vegetable oil ………………. 2 cooking spoon

STEPS

  1. Parboil the rice and keep aside

MAKE CHICKEN STOCK

  1. Put the chicken in a clean pot
  2. Add onion,dry pepper,seasonings,ginger and garlic
  3. Add curry,thyme and salt(add other good spices if you any)
  4. mix properly then add water(allow to cook)

SET THE CHICKEN STOCK ASIDE AND PREPARE THE  GRAVEY

  1. Add veg.oil
  2. Add fresh pepper and onion (stir properly)
  3. Add the tomato paste and allow to  fry very well (then set aside)

NOW MAKE THE JOLLOF RICE

  1. Add the chicken stock in a pot
  2. Add the gravey and then set to boil(add water if needed)
  3. Add little pepper,seasonings and salt (if needed) allow to boil
  4. Add the parboiled rice and allow to cook

BANANA PANCAKES MADE EASY

Pancake recipes are endless,you could do it with any twist  so enjoy this banana pancake the way i and my friends did…lol

INGREDIENTS

  1. Regular pancake mix   ………………………….  500g
  2. Banana ………………………………………………  2
  3. Eggs      ……………………………………………..  3

STEPS

  1. Smash your banana
  2. Add eggs to the smashed banana (mix properly)
  3. Add the (regular pancakes mix) one after the other
  4. Add milk if the mixture is thick
  5. Mix until smooth … then fry

CABBAGE BREAKFAST WITH EGGS(EFIZZYFOODS)

  1. Eggs  ————————  4pcs

  3. Dry pepper   —————  20g
  4. Fresh pepper  ————-  to taste
  5. Fresh tomatoes  ———-  3
  6. Cabbage  ——————- 150g
  7. Salt  ————————– to taste

  9. Curry  ————————- 20g
  10. Flour ————————–  80g
  11. peanuts ———————- 50g(optional)
  12. Veg.oil  ———————– (to grease the pan)

STEPS

  1. Dice the fresh tomatoes,fresh pepper, and onion
  2. Slice the cabbage
  3. Break the eggs
  4. Inside the eggs,add the onion,dry pepper,fresh pepper
  5. Add fresh tomatoes and cabbage(mix very well)
  6. Add salt,curry,seasonings,and peanut
  7. Add flour(mix very well) then fry with veg.oil

OGBONO SOUP MADE EASY

Ogbono soup is very popular here in Nigeria…the combinations will thrill you … Ask ibo boys far…

INGREDIENTS

  1. Ogbono …………………  2 cups
  2. Crayfish ………………………   150g
  3. Pepper ………………………..   To taste
  4. Salt ……………………………… To tatse
  5. Smoked fish…………………..  200g
  6. Dry fish …………………………  150g
  7. Cow skin ……………………….  200g
  8. Goat meat(optional) ………. 400g
  9. Beef(optional) ……………….  400g
  10. Okpei(castor seed) …………  50g
  11. Seasoning cubes. …………… To taste
  12. Red Oil. ………………………. 2 cooking spoon
  13. Onion ………………………………….  1ball
  14. Better leaf(optional) ……………..  1 cup

STEPS

  1. Grind the ogbono
  2. Wash the goat meat,beef meat and cow skin
  3. Set the goat meat,cow meat and cow skin to boil.
  4. Add onions,seasoning cubes and salt(allow to boil)
  5. Add crayfish and Red oil (stir properly)
  6. Allow to cook for at least 2mins
  7. Add okpei(castor seed) and pepper
  8. Add dry fish and stir properly
  9. Add the ogbono and stir properly (allow to cook for at least 1 min plus)
  10. Add water if its too thick for you then stir very well
  11. Add the smoked fish  and allow to cook
  12. Add better leaf and little water if needed.
  13. Allow to cook for at least 1 min…then ready to serve…(WATCH VIDEO HERE)

COCONUT RICE MADE EASY

As the name implies,this beautiful and tasteful coconut rice is made from coconut milk… trust me its very easy to make just check out this simple recipe of mine.

INGREDIENTS

  1. Rice  —————————-   1 kg
  2. Coconut ————————   1
  3. Carrots   ———————–   150g
  4. green beans ——————   100g
  5. Onion ————————–   1 ball
  6. Crayfish  ———————-   100g
  7. Salt —————————-    to taste
  8. pepper  ———————–    to taste
  9. Maggi cubes  —————-   to taste
  10. Ginger  ————————   40g
  11. Vegetable oil  —————-   1 cooking spoon

STEPS

  1. Parboil the rice
  2. Dice the onion,carrots, and green beans
  3. shred the coconut and add water to the shredded coconut,juice it and sieve
  4.  Set on the fire a clean pot,pour in the vegetable oil
  5. Add ginger,onion,and stir properly
  6. Pour in the coconut milk
  7. Add maggi,pepper,and salt
  8. Stir properly and allow to boil
  9. Pour in the parboiled rice, and allow to cook for at least (2min)
  10. Add the diced Carrot and green beans, then allow to cook

LEMONADE MADE EASY

When it comes to drinks,smoothies, and cocktails… Lemon plays a very big role …. Hmmm, don’t argue with me lol…. Well this is how I made a very easy LEMONADE…

INGREDIENTS

  1. Lemons.     ………..   4 PCs
  2. Sugar .    ……………   200g
  3. Water      …………….  4cups
  4. Vodka(optional) …………… 2 shots

STEPS

  1. Boil the water and sugar together till the sugar dissolves
  2. Allow the water sugar solution to cool down
  3. Juice the lemon and remove the seeds
  4. Add the Lemon juice to the water sugar solution
  5. Add vodka (optional) and not for kids.
  6. Always better when served COLD

EGUSI SOUP MADE EASY

Egusi soup is my favourite soup yes… My number one soup … It’s said that anyway you start cooking egusi soup, you can never go wrong yes, but this recipe is one of a kind ..easy and simple to follow…

INGREDIENTS

  1. Egusi(Melon) ……………..  2cups
  2. Red oil(palm oil) ………..   3 cooking spoons
  3. Beef  …………………………  400g
  4. Dry fish(optional)…………  4pcs
  5. Cow skin (optional) …….    200g
  6. Periwinkle(optional)  ……   150g
  7. Seasoning  …………………. To taste
  8. Salt  …………………………… To taste
  9. Pepper    …………………….. To taste
  10. Crayfish  ……………………… 150g
  11. Onion  ………………………… 2 pcs
  12. Stock fish  ……………………   200g
  13. Bitter leaf  ……………………   1 handful

STEPS

  1. Make stock from the beef,cow skin and stock fish,adding crayfish,pepper,onion,and seasonings
  2. Add salt (stir properly)
  3. Let the stock boil for at least 3mins,so that the beef and cow skin will be well cooked..
  4. Set another pot on the fire
  5. Add red oil(palm oil),little onion,and little seasonings (stir properly)
  6. Add the grounded Melon(egusi) to the red oil and fry properly.
  7. Pour in the beef stock and stir properly
  8. Add the dry fish and periwinkle
  9. Allow to cook for about 2mins … Add water if its thick
  10. Add vegetable (bitter leaf preferable)

OHA/ORA SOUP MADE EASY(WITH COCO YAM)

some part of Igbo land calls it Oha soup and some,mostly the Anambras calls it Ora … Either way they are both the same soup … And coco yam is used as the thickener…

INGREDIENTS

  1. Coco yam(grounded) ……………. 500g
  2. Beef …………………….  500g
  3. Stock fish …………….  300g
  4. Dry fish  ……………….. 200g
  5. Maggi ………………….. 3cubes
  6. Onion …………………… 1 ball
  7. Oha leaf ……………….. 2cups
  8. Pepper …………………. To taste
  9. Salt ………………………. To taste
  10. Palm oil ………………….. 1 cooking spoon
  11. Crayfish ………………..  70g
  12. Ogiri(optional)

STEPS

  1. In a clean pot Put together beef,stock fish,and dry fish then set to boil
  2. Add onion, maggi, pepper,and salt and stir properly(Allow to boil for at least 40-50 sec)
  3. Add cray fish and palm oil then stir (Allow to cook for 2 mins)
  4. Add the grounded coco yam(Allow to cook for 2 mins)
  5. Stir properly so the coco yam can dissolve easily
  6. Add pepper if you ain’t satisfy with the first one
  7. Now add you Oha/Ora leaf and stir properly (WATCH VIDEO HERE)

EASY WAY TO MAKE PUFF PUFF

PUFF PUFF is a Nigerian spongy  snack recipe that is deep-fried,and categorise under the  families of small chops, here is my wonderful recipe

INGREDIENTS

  1. Flour   ……………………….   500g
  2. Sugar   ………………………   300g
  3. Yeast  ………………………..   150g
  4. Salt   ………………………….  A pinch
  5. Flavor  ……………………….   1/2 tbsp (optional)
  6. Veg.oil  for frying

STEPS

  1. Add your flour into a clean bowl
  2. Add sugar,flavor,salt,and mix very well
  3. Add your yeast,(NOTE: mix your yeast with warm water to make the puff puff rise faster)
  4. Add water to the mixture them hand mix until it becomes smooth and not too watery it should be thicker than the batter for PANCAKES
  5. the deep fry(NOTE:  please make sure the oil is not too hot else your puff wont be well cooked)
